Juhfark is a local Hungarian variety found mainly in Somló. It is a neutral variety, therefore it expresses the volcanic terroir of the region in a most pronounced way. It was fermented spontaneously and matured in 500-litre Hungarian barrels on the lees. The wine has not been filtered or clarified. The citrus and apple notes are rounded off with delicate herbal spices that do not overpower the salty and mineral flavours. The wine has vibrant acidity and a long finish. A great wine with salty cheeses, oily fish or lamb dishes.
